Go-To Balanced Lunch Bowl (Detox Friendly)

INGREDIENTS

Here's what you'll need for 1 serving:
  • 1 small sweet potato (omit during FM detox if you are following the weight loss plan)

  • 1/2c organic broccoli, boiled in filtered water

  • 1/4c organic chickpeas (boxed or in a glass jar if possible)

  • 1 tbsp organic coconut oil

  • 1 cucumber, sliced

  • Handful of organic spinach

  • 4 organic basil leaves, sliced

  • 1/2 an avocado, sliced

  • 2 tbsp organic hemp hearts

  • Squeeze of fresh lime

  • Salt & pepper to taste

INSTRUCTIONS

Here's how to make it:
  • Preheat the oven to 400F, place the sweet potato on a sheet pan & bake for 25-30 mins (or until soft to touch)

  • While the sweet potato is baking, prepare the broccoli & chickpeas

  • Boil the broccoli in filtered water about 8-10 mins

  • Saute the chickpeas in a pan on medium heat with coconut oil & any other herbs you choose (I love to use curry powder)

  • Remove sweet potato from oven, allow to cool a little, then remove the skin (should be easy to peel it off)

  • Add all ingredients to your bowl
