INGREDIENTS
1 tbsp ground flax + 3 tbsp water
1/3 cup avocado oil
2/3 cup coconut sugar
1 tsp vanilla extract
2 cups oat flour
1 tsp baking powder
1/2 tsp pumpkin spice
1/4 tsp salt
1/2 cup chocolate chunks (enjoy life brand)
Simple Mills chocolate brownie thins
Mini vegan pumpkin spice marshmallows (Dandies brand or plain)
INSTRUCTIONS
Preheat oven to 350°F.
Combine 1 tbsp ground flax with 3 tbsp water and place in fridge for 5 minutes.
In a bowl, mix avocado oil, coconut sugar, and vanilla extract.
Add the flax mixture and combine.
Add oat flour, baking powder, pumpkin spice, and salt. Mix well.
Fold in chocolate chunks.
On a parchment-lined baking sheet, layer 1 Simple Mills chocolate brownie thin with 3 mini vegan marshmallows. Scoop cookie mixture on top, forming it around the marshmallow and cracker. Repeat until all cookie dough is used, about 9-10 cookies total.
Bake for 10-12 minutes.
